My father-in-law makes wonderful chicken souvlaki but then he always cooks it over the charcoal. When he has cleaned the chicken he just rubs fresh lemon into the flesh, and sprinkles with salt, pepper and oregano. Then he sprinkles som extra lemon over the top and leaves it for a couple of hours. When it is cooking he puts more oregano on it. Its only simple but it comes out very tasty...
