It shouldn't be too difficult to find the type of job that interests you; there are many tavernas, cafes, bars and hotels in Greece that are very busy during the summer tourist season. A few of the more mellow-type islands are Zakinthos and Kefalonia on the Ionion. Also, look into Paros, Andros, and Naxos on the Aegean side if you want a smaller island. Avoid the big islands like Santorini and Rhodes if they are not your style. Usually, a job hunt for a wait staff position in Greece entails on doing a lot of 'knocking on doors', so to speak. So you probably need to go to Greece and ask around at the places that interest you. I doubt little cafes and tavernas post their openings online, but you never know. Maybe check a daily paper.
