According to what we were told, no conversion by either person is necessary. The Greek church will marry the couple with the understanding that the children will be fostered in an orthodox environment and baptized orthodox. I have never heard of anyone having to sign papers, but all of the procedures are variable depending on who the priest is and how liberal they are. Some are more so than others.
If you are married in an orthodox church by an orthodox priest, there is nothing to worry about in terms of "not being in good standing".
