Helen,

You can use kefalotiri or kasseri (cheaper for large amounts). Slice the cheese in nice size squares and flour on each side. Heat a small amount of olive oil (enough to coat the pan) and
cook cheese on both sides till it begins to melt and gets some color. When done, squirt some brandy (ie Metaxa or Bicardi 151) and light up.

Put the flame out w/some lemon and serve Saganaki over a slice of good bread. Serve w/kalamata olives and pepercinni's.
