How do you make real Gyros? Like the ones you get in the restaurants?
I've searched for a long time and have many fine recipes with all the right spices, ect.
They all tend to end up like Gyro-Meatloaf, taste great but the texture isn't good.
I've used one recipe where you grind the meat real fine, then mix up all the spices,ect, then line a bread pan with bacon and fill the meat into the pan and fold the bacon on the top, then apply pressure with another bread pan with weight, before and after you bake the meat. It compresses the meat, but it doesn't have the same texture as the restaurants.
Any recipes out there to help out or am I missing something?
