The word gyros refers to a specific type of roasting meat trimmings that are left on animal carcasses after they have been slaughtered, which could not be consumed in any other way (with the exception possibly of "patsas" soup which utilizes similar types of meat and fat trimmings).

Gyros is not used in many dishes but it is served as a delicacy traditionally and as a companion to other dishes. It is also used in the making of the famous "pita souvlaki" dish that is so popular in Greece - and for good reason!

One gyros manufacturer is "Kronos Gyros". They can be contacted at the toll free: 1-800-621-0099. I reccommend highly that you contact them to obtain recipes and other information regarding gyros.
