I know most priest say that the godparent must be Orthodox but I am not sure if they mean Greek Orthodox in the strictest sense.
Jack is also right, there are some priests who will allow the Godparent not to be Orthodox.
From my experience, the Christening of a baby in the Greek Orthodox Church, is probably something that Priest are usually very strict about.
So my advice to you is to speak with your Priest where you are going to christen your child.
